The bhut jolokia — ghost pepper — was the first pepper ever verified past a million Scoville units, confirmed in 2007. In Assam it grows along fences as an elephant deterrent, which is a fair summary of its personality.
Ghost heat is famous for its delay: the first bite tastes almost sweet and smoky, and the fire arrives ten to forty-five seconds later, then stays. Makers who use it well — as a blend component, not a dare — get a long, warm finish no other pepper gives.
Tony's handcrafted ghost sauce is this shelf's bottle: a Hot-band pour that behaves politely for exactly as long as the pepper lets it.
