The jalapeño is the world's reference pepper — the heat most people mean when they say 'a little kick.' Picked green, it tastes grassy and bright; left to ripen red, it turns sweeter and a shade hotter.
That ripe red jalapeño is also the pepper behind sriracha: Huy Fong's famous rooster sauce is a fermented red-jalapeño mash, commonly cited around 2,200 SHU — which is why it pours so friendly despite the fierce-looking bottle.
On this shelf the jalapeño carries the Warm band's everyday bottles — El Yucateco's green-sauce warmth and Trader Joe's Green Dragon, where tomatillo does the talking and the pepper keeps time.
