Calabria, the toe of Italy's boot, puts its chili in nearly everything — and its signature move is the bomba: chopped Calabrian chilies preserved in olive oil, more a rich red spoonful than a sauce.

The heat sits in the honest middle — hotter than a jalapeño, nowhere near a habanero — and it lingers warmly instead of spiking, because the oil carries it. That is why Italian makers build on it: the pepper brings fruit and color first, fire second.

Three bottles here run on it, including the truffle bomba — proof the pepper plays as well with luxury as with peasant food, which in Calabria are often the same table.
