Ají chombo is Panama's pepper: a Scotch-bonnet-class chili grown and loved on the country's Afro-Caribbean coast, where it seasons everything from patí to seafood soups. La Sabrosita's habanero-style sauce is built on it — fruity, golden, and properly hot, in the style Panamanian home cooks and fondas pour daily. Bottles like this almost never leave Panama; the domestic market drinks in the whole supply. Finding it on a US shelf is the exception, and it is here because of that.

The heat, honestly

Ají chombo runs in the same heat class as Scotch bonnet and habanero — a fruity burn that arrives fast and lingers warm. No Scoville figure is published by the maker. A few drops carry a whole plate; treat the first pour with respect and it will treat your cooking very well.
