Two pepper cultures meet in this bottle. Bajan pepper sauce — the mustard-kissed, fiery condiment of Barbados — is one tradition; Vietnamese chili saucecraft is the other. Mr. Bajan fuses them, and grades the result by levels. Level 2 is the serious tier: real heat with the bright, tangy lift both traditions share, made for grilled meats, rice dishes, and anything off a barbecue.
